What I Eat In A Day: Vegan

Today I thought I would do a quick post on what I eat in a day since these are becoming quite popular and I also want to show how easy it is to eat as a Vegan student. I have just become Vegan however before I decided to become completely animal produce free all I ate was cheese in terms of dairy so making the transition was not difficult for me. I aim to not only show how easy it can be but motivate myself not to stray from this lifestyle. I hope you enjoy!






I know skipping breakfast is bad but honestly when I wake up 15 minutes before an early morning lecture I never have the time to make anything (Awful I know!). Instead I will always try to have a cup of green tea for that extra caffeine boost or a smoothie. This morning I opted for some caramelised apple green tea, this is perfect for anyone who hates the taste but loves the benefits of green tea plus I adore my Audrey mug! 


After my lecture I was feeling quite hungry but it was not quite lunch so I made a quick healthy snack of sesame crisp breads and caramelised onion hummus which tastes amazing!   


For lunch I had my favourite soup, carrot and coriander! This is the fresh one from Aldi which is 100% Vegan and super affordable. 


For dinner I done my usual of experimenting with what I have and hoping for the best. This actually turned out really well. I was craving carbonara so improvised by creating a creamy avocado sauce and added spinach for that extra iron boost. This is by far the best pasta dish I have created in a while and it was super filling! 

In between this all I do try to drink water and I snack on fruit! I hope you enjoyed this post, It's different from my usual fashion posts but I wanted to advocate my lifestyle a bit more!

  5. i'm vegan as well you can make risotto using avocado which tastes amazing! There is a recipe on Livia's kitchen somewhere x

  6. A lot of people say eating a vegan diet is boring and all about vegetables but it isn't. Do you eat a lot of vegan cheese? x

    1. I was also not a huge meat eater before! Chicken and occasionally salmon were all I ate! It makes the transition to veggie easier! X

  8. really interesting- i love this type of blog as I am a gluten and dairy free blogger. I do eat some meat becuase I think gluten free vegan would be impossible!
